Xilinx, ARM, and Adam Taylor did a seminar with the Arty S7 and one of the Cortex M cores which you believe you can access here: https://mautic.digilentinc.com/arty-s7-workshop-land-page. As far as I know (Digilent was not part of the seminar) it does not have any material for the Pmod OLEDrgb, but it may be a helpful start for you.
